No Bake Coconut Oil Cookie Drops

Sometimes I just don’t have eggs and I need a chocolate treat….I need cookies!   And I love coconut oil so I wondered, hmm, let’s try cookies with coconut oil vs eggs.  And with the  health benefits of coconut oil, I thought it was worth a shot.  Check out these yummy cookie drops.  And actually since they have no eggs, no (cow) milk, and no flour, they are gluten and vegan.  BAM!  A cookie drop for all to enjoy.

add all ingredients except oats, vanilla, and dried fruit

 

 

 

 

 

 

stir on medium heat until consistent boil

 

 

 

 

 

 

 

take off stove and add vanilla then oats then dried fruit. mix well

 

 

 

 

 

 

 

scoop on wax paper and let cool ( I like putting them in the frig)

 

 

 

 

 

 

 

 

 

(if for some reason they are sticky and not “forming”, you may need to cook mixture longer on stove for a minute or two)

Ingredients

  • 1/4 c your favorite milk (I use almond milk)
  • 1/8 c cacao powder
  • 1 3/4 c oats
  • 1/4 c peanut butter (or any of your favorite butter)
  • 1/4 c organic unrefined coconut oil (measure in liquid form)
  • 1/2 c organic raw sugar
  • 1/4 tsp. salt
  • 1/2 tsp. pure vanilla
  • 1/4 c dried fruit (cherries or blueberries I like)

Instructions

  1. lay out wax paper on cookie sheet
  2. measure oats and set aside
  3. heat stove top to medium for mixture
  4. in saucepan, add: peanut butter, coconut oil, milk, sugar, salt, and cacao powder
  5. stir on medium heat until well blended and mixture comes to a consistent boil.
  6. keep stirring for 5 minutes; sides and bottom, keeping mixture even
  7. reduce heat to low, and add vanilla. Stir and then add oats.
  8. take off heat. Mixture oats evenly so all oats have chocolate. Then add dried fruit. mix
  9. scoop on wax paper. let cool and even better, chill in the frig. enjoy!
