Ingredients

  • 1/2 tsp. cinnamon
  • 2 c oats, instant is fine
  • 1 c packed dates
  • 1 c nuts, such as almonds-cashews-walnuts
  • 1 1/2 tbsp. blackstrap molasses
  • 2 tbsp. grated fresh ginger
  • 1/4 c chopped small candied ginger
  • 2 tsp. water

Instructions

  1. in food processor, blend dates until tiny pieces
  2. blend in nuts next
  3. add the oats into processor until it becomes a ball of "dough like" consistency
  4. add in fresh ginger, molasses, and spices, and water until "dough" becomes tacky
  5. stir in candied ginger. roll dough into small balls, flatten if desire.
  6. lay balls onto parchment paper on plate and refrigerate for 20mins.
  7. keep in refrigerator in sealed container. will stay for 2 weeks.
