And every time I mow, I’m always mowing some peppermint leaves and it starts smelling like peppermint.  And well,  it makes me think of those delicious minty patties.  So as I was mowing I thought, oh heck yeah! Chocolate dipped peppermint leaves.  I can totally make a healthy version of my favorite chocolate candy.  Plus mint has health benefits – calming, helps in digestion and has vitamins and antioxidants.  And good quality dark chocolate has benefits too – antioxidants, soluble fiber, iron, magnesium, copper, manganese, potassium, zinc and selenium.

I couldn’t wait to jump off the mower and try this out – will it taste as yummy as I imagined?…Why yes, yes it did!   And now you can try it out too.  Tell me what you think.

Ingredients

  • 12 fresh picked peppermint leaves
  • 1/2 oz dark chocolate

Instructions

  1. 1) in a double boiler, cut chocolate into tiny pieces or shave the chocolate 2)melt chocolate and turn off stove top. 3) with a cooking brush (what you use to coat your bbq meat with), dip it in the chocolate and paint one side of peppermint leaf. 4) repeat brushing to all leaves, paint one side. 5) place leaves on a clean plate and put in frig so they don't melt (if in warm climates) 6) store in frig and consume within three days.
